In the roaster, we are focusing on primarily a balance between Conductive and Convective heat transfers to enliven the fruited tastes of this gorgeous Natural that had a 48 hour Anaerobic process before drying. Kalimaz has an incredible balance between jammy notes and elegance that is wildly dynamic. We will do what we can to highlight those strengths. Development-wise, we are using a balanced approach that threads the needle between Bonbon and Flora in roast degree, which will help in its versatility in brewing.
